On a hot summer’s day, sometimes a cold beer just isn’t quite enough — and neither is ice cream. So why not combine the two? Enter beer ice lollies, also known as beersicles or beer popsicles. We tested two easy, refreshing recipes, but honestly, there’s no limit to what you can try. From lagers and IPAs to stouts and fruit beers, there’s a whole world of beer and ice waiting to be explored.These recipes contain alcohol and are not suitable for anyone under 18. Looking for a non-alcoholic option? Simply use 0.0% beer. It's just as refreshing, minus the alcohol. Citrus Desperados Beer Ice Lollies A zesty, refreshing ice pop beer with citrus sweetness and a crisp beer finish. Ingredients 1 lemon 1 grapefruit 4 teaspoons sugar Desperados beer (from bottle or tap) Method Step 1Grate the zest of the lemon and grapefruit into a small bowl. Step 2Add the sugar and rub the mixture together with your fingers until it becomes slightly sticky. Step 3Squeeze in the lemon and grapefruit juice, then discard the rinds. Step 4Divide this citrus mixture evenly between the ice lolly moulds, filling them halfway. Step 5Top up each mould with Desperados beer. Bonus points if you’re pouring straight from a home draught machine. Step 6Freeze for at least 5 hours, ideally overnight. Ingredients 1 orange 250ml orange squash IPA (Lagunitas works brilliantly, but any IPA will do) Method Step 1Pour the orange squash into a bowl. Step 2Squeeze in the juice of the orange and mix well. Step 3Pour the mixture into ice lolly moulds until they’re half full. Step 4Top up with IPA. Give each mould a gentle stir before sealing. Step 5Freeze for at least 5 hours, preferably overnight.
